Odisha Rasagola a mouthwatering culinary delight made of cottage cheese. During the festival of “Niladri Bije", Lord Jagannath offers rasagola to his disgruntled consort Goddess Laxmi on his return from a nine-day-long Rath Yatra.
Odisha rasagola have their unique identity which is very soft to feel, juicy and non-chewy in consistency, and can be swallowed without teeth pressure. The chenna water of curdled milk is not all drained out which makes chenna soft and gives aroma. The dough is mixed with semolina in 4:1 ratio for bonding and sugar syrup is much stronger here.
Generally, the Odisha rasagola is white in colour with round
shape (non‐ spherical) but off white rasagolas in various shades are also
prepared. Colour development of Odisha rasagola is very specific, where without
addition of external colour, various intensity coloured rasagolas are prepared
using the principle of caramalisation of sugar with specific methods of
preparation.
